How to Bake the Perfect Chocolate Chip Cookies

Last week I had to put together a demonstration speech for one of my communications classes, so I chose the topic "How to Bake the Perfect Chocolate Chip Cookies". The cookies turned out so delicious I had to share the recipie with you all! 

The ingredients that you need are:

Flour

Cane Sugar

Brown Sugar

Vanilla

Baking Soda

Eggs

Butter

Semi-Sweet Chocolate Chips  

The materials that you will need are:

2 Mixing Bowls

Measuring Cups 

Parchment or Wax Paper

Cookie Sheets 

Optional: Hand Mixer or Kitchen Aid

Before you start mixing, you will want to preheat your oven to 375 degrees Farenhite. Then in a small mixing bowl combine:

2 1/2 Cups of Flour 

1 Tsp Baking Soda 

1 Tsp Salt 

In a large mixing bowl combine:

3/4 Cups Brown Sugar 

3/4 Cups Cane Sugar 

1 Tsp Vanilla 

1 Cup or 2 Sticks of Butter

Make sure that the butter is soft enough to mix, but still chilled. Combine the butter and sugar mix until creamy, and then add in 2 eggs, one at a time. 

After all the wet ingredients are combined, slowly add in the flour mixture until everything is combined. Then fold in 2 cups of chocolate chips.

Once all the ingredients are combined, take a about 2 Tbsp of dough and create a ball and place it on the cookie sheet. 

Bake the cookies from 9-11 minutes, or until the edges start to brown. 

Once they are done, let them cool and then enjoy!

Culinary Dropout // Crispy Shrimp Kale Caesar

This is my favorite kale caesar because the dressing is a vinageratte and the shrimp is just so yummy. If you are at Culinary Dropout the pretzel rolls and fondue appetizer is a must!!

Raw Brownies

Happy Monday! Today I'm sharing one of my favorite recipes! I tried this recipe recently and its so yummy! Raw brownies are the perfect sweet treat that are completely healthy, with no added sugar or preservatives. While they are healthy because they are made with 4 natural ingredients, they are still high in natural sugar because of the dates.

Samantha McNeil Blog Raw Brownies Ingredients

1 cup of Dates (pitted and chopped)

1 1/2 cups of Walnuts 

1/3 cup of Cacao Powder (or Cocoa Powder)

1 tsp of Vanilla

To make the brownies I put the ingredients into a food processor and blend until smooth, occasionally stoping and string the mix so its blends evenly. After  everything is combined I take a cookie dough scoop (slightly smaller than an ice cream scoop) and create the little brownies. This recipe makes about 10 brownies. After the brownies are made I pop them in the fridge so they can harden a little bit and then enjoy!

The first time I made these I used cocoa powder and they were yummy, but the second time I used cacao powder and they tasted so much better, but they were oddly a little oily so I added a little more powder in the end and had to pop the mixture in the fridge for a little before scooping them, but I recommend cacao over cocoa because of the nutrients.

Coronado via my iPhone

Earlier this week I went out to Coronado, California to visit on of my best friends, Caroline. It was a super short trip, we drove out Sunday and I flew home Tuesday night. Sunday night we picked up Clayton's Mexican Take-Out and went to Suicide Squad (which was so good). Clayton's is a cute little diner on Orange Avenue that has a Mexican take-out window on 10th St that is pretty cute.

On Monday we headed up to Corona to Glen Ivy Hot Springs. They had a lot of different healing pools and a mud bath that was fun. After Glen Ivy we headed back to San Diego and went to dinner in Old Town at Casa de Reyes. If you are in Old Town you have to try either Casa de Reyes or Casa Guadalajara they have amazing Mexican food!

They recently opened up a Juice Crafters on the island and I am in love with their Greenest Plus #3.5! Caroline and I stopped in Tuesday morning for breakfast before renting bikes and biking down The Silver Strand.  After out ride we headed over to the beach by the Hotel Del Coronado.

The beach in front of The Del is one of my favorites, the sand is gold and there are always dolphins. I grew up going to The Del every summer, so its always so fun visiting Caroline on the island.

Before I went to the airport Caroline and I grabbed dinner at Cafe Gratitude in Little Italy, San Diego. Cafe Gratitude was such a cool experience, everything on the menu is vegan and named something positive, so when you order you say the positive affirmation "I am ..." and when they bring out your food they reinforce the positive affirmation by saying "You are..." Everything was so delicious, I definitely recommend it if you are in San Diego.
